We roll out weekly specials at our market stall and pop-up events, including a range of vegan and meaty dishes that are popular in Tibet. This is beef shaptak. Tibetans usually use yak meat but beef is a good substitute. We marinate it overnight in garlic, ginger and Himalayan pink salt, and then cook it with mixed peppers, green onion, fresh spices and a little fresh green chilli.
